
This three berry crumble is a big hit in my house and soon will be in your home too! When I teach this recipe in class, I get at least three phone calls within the week from students who tell me that not only their husbands LOVE it, but the kids devoured it. Below, I have the dairy free version, but you can easily switch the Smart Balance for real butter. If nuts is not your thing, then omit them from the crumble and add more oats. Happy Eating!

Not only does my daughter LOVE making these, she eats them like CANDY!
Gluten Free ~ Sugar Free ~ Wheat Free ~ Dairy Free
- 3 cups pitted dates
- 1 cup dried apple (sulfate free)
- 2 tbls brown rice syrup
- 1/2 cup carob chips
- 1/2 cup unsweetened shredded coconut
- 2 cups unsweetened shredded coconut for rolling
Combine the first five ingredients in a food processor. Pulsing at first to thoroughly combine. When it seems completely combined, turn out the mixture onto a piece of parchment paper. Put the 2 cups of shredded coconut into a bowl for easy rolling.
Place a small bowl of water near your “dough” to keep your fingers wet (so mixture does not stick). Roll in to desired size and then roll in to coconut. Will keep in an airtight container for up to three weeks – but they won’t last that long with your family!!
